Ingredients:

  • 1.5 lbs chicken thighs (bone-in, skin-on)
  • 1/2 cup soy sauce
  • 1/2 cup white vinegar
  • 1/2 cup water
  • 1/4 cup brown sugar
  • 4 cloves garlic, minced
  • 1 bay leaf
  • 1/2 tsp black pepper
  • 2 tbsp cooking oil

Instructions:

  1. In a large bowl, combine the soy sauce, white vinegar, water, brown sugar, minced garlic, bay leaf, and black pepper. Mix well to dissolve the brown sugar.
  2. Add the chicken thighs to the marinade, making sure that each piece is fully coated. Cover the bowl with plastic wrap and marinate in the fridge for at least 1 hour or up to 24 hours.
  3. In a large skillet or Dutch oven, heat the cooking oil over medium-high heat. Add the chicken thighs, skin-side down, and cook until browned and crispy, about 5 minutes.
  4. Flip the chicken over and add the remaining marinade to the skillet. Bring the mixture to a boil, then reduce the heat to low and cover the skillet.
  5. Simmer the chicken for 30-40 minutes, or until the chicken is cooked through and tender, and the sauce has thickened. Be sure to stir the chicken occasionally to prevent it from sticking to the bottom of the skillet.
  6. Once the chicken is cooked through, remove it from the skillet and place it on a serving platter. Pour the remaining sauce over the chicken.
  7. Serve the Chicken Adobo hot, garnished with sliced green onions or chopped fresh cilantro, if desired. This dish goes great with steamed rice and a side of vegetables.
